A clay vessel lay half-buried in the earth of a forgotten storage room. When archaeologists carefully excavated the soil settled inside, they discovered something that shouldn’t have survived five centuries: two perfectly preserved potatoes. Found at Tambo Viejo in Peru’s Acarí Valley, these ancient tubers offer a rare window into how the Inca engineered one of history’s most ingenious food preservation strategies. This isn’t just about an old potato—it’s about how an empire fed itself across vast distances without modern refrigeration.
When the Mountains Met the Coast
In 2024, a team of researchers working at Tambo Viejo, an arid settlement on Peru’s southwestern coast, were excavating a storage facility from Inca times. The site had already yielded mummified llamas and shards of pottery that hinted at the hub of activity that once thrived there. But when they unearthed the clay pot and brushed away centuries of accumulated dirt, the realisation hit immediately. Lead researcher Lidio Valdez, upon seeing the two specimens nestled at the vessel’s base, recognised them at once: chuño. The freeze-dried potatoes that had fed an empire.
Adjacent to the potatoes lay fragments of Inca pottery and a spindle whorl—everyday objects that anchored the discovery in time. The artefacts suggested these were no accidental finds but deliberate stores, likely dating to the 15th or 16th century. Research published in the Journal of Field Archaeology detailed how the potatoes’ location inside sealed pottery, protected by the valley’s arid climate, had allowed them to endure where moisture would normally cause decay.
The Ancient Art of Frost and Sun
The Inca never called it freeze-drying. They called it chuño, a technique so effective that it predates the Inca empire itself—archaeologists believe it emerged from accidental discoveries when potatoes were exposed to mountain frost and accidentally became preserved. The method is deceptively simple: expose potatoes to the harsh nighttime frosts of high altitude, then lay them in direct sunlight during the day. Repeat this cycle until all moisture has been drawn from the tuber. What remains is lightweight, shelf-stable, and edible for years.
But this strategy only works at elevations above approximately 11,800 metres, where reliable hard frosts occur through the growing season. Potatoes are roughly 80 per cent water, making them vulnerable to rapid decay in warmer climates. Coastal valleys like Acarí, despite their aridity, cannot produce chuño naturally. The Inca understood this constraint, and they engineered a solution: mountain communities would create the freeze-dried product, then transport it down vast networks of roads by llama caravan to feed lower-lying populations. The lightweight, preserved tubers made the journey feasible across hundreds of kilometres.
A Food Network Built on Innovation
The discovery of these two potatoes reveals something profound about Inca infrastructure. These specimens didn’t originate in the Acarí Valley—they had journeyed there from the highlands, packaged in pottery, carried by pack animals along stone roads. Their presence at Tambo Viejo, a centre of Inca administrative life, suggests a deliberate strategy: moving nutritionally dense, preserved food to support imperial projects and garrison populations.
Valdez described chuño production as a “savvy strategy” that prevented food loss and created reserves to sustain the empire’s ambitions. Potatoes were native to the Andes and offered the Inca a crop rich in essential nutrients. By mastering preservation, the Inca solved a problem that had plagued earlier civilisations: how to transport staple foods across diverse climates without spoilage.
The same technique extended beyond potatoes. The Inca applied identical freeze-drying principles to meat, creating a preserved product called charki—a word that eventually evolved into the English term “jerky.” This wasn’t accident or experimentation; it was deliberate, systematic food engineering.
The Rarity of Finding What Lasts
Only twice have archaeologists uncovered physical evidence of chuño at Inca archaeological sites. Each discovery feels like receiving a direct message across five centuries. Most coastal Peruvian sites remain unsystematically excavated, meaning the earth may still hold other preserved foods, other storage vessels, other glimpses into how an ancient empire sustained itself.
Valdez’s closing reflection captures the significance: the Inca have lessons still waiting to be learned. These two potatoes, lighter than they once were, still carry weight. They remind us that survival, ingenuity, and the movement of resources across difficult terrain required not just ambition, but genuine wisdom about how to engineer solutions that lasted.
Somewhere in the mountains above the Acarí Valley, the same frosts that preserved these potatoes still fall each night. But now those mountains stand largely empty of the Inca who once knew how to transform ice into security, and scarcity into abundance.
